Flaked maize is corn that has been steamed, rolled and gelatinised allowing it’s starches to be readily accessible for conversion to sugar. Flaked maize has no enzymes of its own which it can use for conversion so simply add it to your mash vessel with other malted grains to allow conversion of the starch.
