Adjusting water chemistry is often seen as the final frontier in all grain brewing. Controlling mash pH, getting the balnce between full bodied or crisp hop flavour, emulating the water profiles of the classic such as rich malty Bocks or classic Irish Stouts – often the right water profile is the last step to really nail in the flavour.
With some styles (NEIPAs – I’m looking at you) it’s almost essential: having the right balance of Calcium Chloride to Sulphate will give you the soft, full mouthfeel that is considered to be defining, style wise.

1 x Calcium Sulphate (Gypsum) – 500g
1 x Calcium Chloride (Pickle Crisp) – 500g
1 x Calcium Hydroxide (Slaked Lime) – 500g
1 x Magnesium Sulphate (Epsom Salts) – 500g
1 x Phosphoric Acid 85% – 500ml
